Stuffed Mushrooms

Stuffed with creamy goats cheese, ricotta & caramelised onion

• 500g large mushrooms
• 2 tbsp Always Fresh Caramelised Onion Relish
•  50g fresh ricotta
• 50g goats cheese/feta, crumbled
• 1/3 cup almonds, slivered
• 3 tbsp Italian parsley, finely chopped
• 1/3 cup Always Fresh Extra Virgin Olive Oil


Wipe the mushrooms clean.

Combine relish, cheeses, almonds and parsley; fill mushrooms with cheese mixture.

Place the mushrooms on a lightly greased baking dish, and drizzle with olive oil.

Bake at 180°C for 10-15 minutes or until lightly browned.
