Stuffed Mushrooms

Makes: 4 serves

Ingredients:

  • 500g large mushrooms
  • 2 tablespoons Always Fresh Caramelized Onion and Rosemary Salsa
  • 50g fresh ricotta
  • 50g goats cheese/feta, crumbled
  • 1/3 cup almonds, slivered
  • 3 tablespoons Italian parsley, finely chopped
  • 1/3 cup Always Fresh Extra Virgin Olive Oil

Method:

Wipe the mushrooms clean. Combine salsa, cheeses, almonds and parsley; fill mushrooms with cheese mixture.

Add the mushrooms to a lightly greased baking dish, and drizzle with olive oil.

Bake at 180°C for 10-15 minutes or until lightly browned.
