Stuffed Mushrooms

Makes: 4 serves
Ingredients:
- 500g large mushrooms
- 2 tablespoons Always Fresh Caramelized Onion and Rosemary Salsa
- 50g fresh ricotta
- 50g goats cheese/feta, crumbled
- 1/3 cup almonds, slivered
- 3 tablespoons Italian parsley, finely chopped
- 1/3 cup Always Fresh Extra Virgin Olive Oil
Method:
Wipe the mushrooms clean. Combine salsa, cheeses, almonds and parsley; fill mushrooms with cheese mixture.
Add the mushrooms to a lightly greased baking dish, and drizzle with olive oil.
Bake at 180°C for 10-15 minutes or until lightly browned.
